When I worked in a corporate bakery, I was often asked if we made anything that was gluten free, soy free, and dairy and egg free. Um, water?!
Most of the time, the people who would ask me this question were buying a treat to bring to their son or daughter's classroom to celebrate a birthday, holiday, or special event. The parents always seemed so stressed out because they wanted to make sure that what they were bringing would work for all the kids in the class, not leaving anyone out. Totally understandable!
These mini whoopie pies are a great solution to that "what can I possibly bring that every kid in the class can eat" problem. Made from mostly black beans, cocoa, and coconut cream, these cookies are not only soft, rich, and delicious, but you'll never know that they also provide some nutrition!
