Oatmeal and Berry Breakfast Soufflé

Even though the days are still short and often drizzly, it is feeling more and more like Spring and I love it!  There are two trees in my backyard that are currently blooming with the most beautiful flowers, one bright pink and the other deep red.  Its like they know it was just Valentines Day.  The reason I love Spring is because the bright beautiful colors that line the neighborhoods and streets, and the fresh sweet berries that start to trickle into the grocery stores.  

I love baking with berries and when I do, I usually end up making some sort of muffin or breakfast pastry.  I decided that the perfect way to celebrate Valentines Day would be with a breakfast oatmeal and fruit soufflé using the new VeganEgg by Follow Your Heart.  I've experimented with VeganEgg once before by making a quiche and it turned out really well, so I took my chances with a soufflé.  I was pleasantly surprised at how nice it turned out; it wasn't only beautiful but it tasted great as well.  It was light and fluffy, naturally sweet from the berries, and filling.  And if you use gluten free oats, this dish is vegan, soy free, and gluten free!
