There is something incredible about a hearty casserole that you can easily throw together and serve to a large family or at a dinner party. Or better yet, theres something fantastic about making a large casserole and having some for dinner and saving the rest for lunch the rest of the week. I'd be lying if I said I didn't do that all the time.
This casserole can easily be altered to contain any vegetable you have on hand, but the combination I used was pretty plentiful and pretty delicious. Top it with an avocado and cilantro cream sauce and some vegan shredded cheese, and you can't beat this warm casserole thats bursting with flavor and nutrients.
