If you're anything like me, then you understand that macaroni and cheese is the greatest comfort food to ever exist.  There is something about creamy cheese over pasta that just hits the spot and makes everything right in the world.  In fact, when I was in middle school I'm pretty sure the first thing I did when I got home from school every day was make a bowl of macaroni and cheese. Apparently life was rough then because I really needed some comfort food!

But those days of unhealthy eating are over and now I'm focused on providing my body with the right nutrition that it needs.  And now that I have a little one to care for, I'm extra determined to sneak in those vegetables as much as possible!

Say what? Macaroni and cheese made with vegetables?  Yes, its possible!  Carrots, onions, and potatoes all blended together with nutritional yeast, a few other spices, and water make for a super creamy cheese sauce that goes great with noodles (and nachos, french fries, quesadillas, etc.).  Plus a sunflower seed cheese, cashew cheese, and vegan bacon make for a rich, comforting, and nutrient dense casserole.  If you've never made vegan macaroni and cheese before, I definitely recommend giving this recipe a try.  It just might be your next guilt free go to comfort food meal!
