Now that warmer weather is just around the corner, its time to perfect my veggie burger and sausage recipes so I am prepared when grilling weather arrives! One of my main requirements for homemade sausages (and burgers!) is that they don't crumble on the grill. To prevent this from happening and to add more moisture to the "dough," I steam and then refrigerate them so they really firm up.
I decided to use black eyed peas as the "base" ingredient, as I try to limit the amount of soy I consume every day. The black eyed peas offer a mild flavor, allowing the spices and vegetables to really shine through in every bite. Don't be afraid to customize the spices to your liking as well!
