30-Minute Guilt Free Fudge Brownie Cookies

I'd be lying if I said these were planned.  In fact, this was a huge mistake.  If ever there was a time for a major mistake to turn into a great success, this might just be that time.  

It all started when I was craving brownies but didn't want traditional brownies made from refined sugar and oil.  I mean those are good don't get me wrong, but I'd regret it the minute I ate them!  So I raided my fridge and pantry, and decided on walnuts, dates, and zucchini as the base.  What a combo! And then I threw in some peanut butter for good measure!  I also was lazy that day and didn't feel like cleaning up loads of dishes, so I decided to throw everything in the food processor and hope for the best.  

When I took the lid off of the food processor to examine the results, I was instantly disappointed in the texture.  It definitely didn't resemble brownie batter.  So I settled on scooping the dough into small balls and placed them on a cookie sheet, and as I put them in the oven, I again hoped for the best.

The results?  Chewy, chocolatey, sweet, soft, rich, and delicious little bite size cookies that will satisfy every chocolate craving.  And you don't have to feel bad about eating them, not even for one second!
