Vegan, Soy Free
I may have mentioned this before, but I really don't like salads. They take a long time to make, and unless they have tons of add-ins (like when you go to a salad buffet bar and you can literally put 30 different kinds of toppings on top so you can't even tell there is lettuce on your plate!), they are just plain boring. Maybe my dislike stems from when some people find out I'm vegan, they'll ask, "so uhh, what do you eat then, salad?" Seriously!? The only vegan thing you can think of is SALAD?!
So for those reasons, I make damn sure that my plain old boring salads aren't plain and boring at all. In fact, they are so packed full of flavor and nutrients that you would never know that you're eating something vegan, healthy, or salad-like. This particular salad incorporates all the beautiful colors of spring and summer veggies, tender orzo pasta, and a creamy hemp-tahini-lemon dressing that just tops this whole thing off perfectly. Take that, stupid boring vegan salad!
