Vegan, Gluten Free, Soy Free
I'm a self-proclaimed carbohaulic, but I also have a sweet tooth...a dangerous combination, right?! Give me bread and give me sugar and I'm a happy camper! Because of my two addictions (hey, the first step is admitting it, right?!), naturally one of my favorite things to do is bake. I can remember baking cookies with my mom almost every week when I was just a toddler, and I remember baking on my own when I was in my early teens (possibly even before). I could probably bake something new every day of the week, but then I'd also have to eat them and yea, we know what happens then.
In an effort to feel less guilty about my baking addiction, (orrrr maybe its just an excuse to eat more of my creations), I try to find healthier ways to make something delicious. Less oil, less refined sugar, more nutritional ingredients, and more natural sugars from fruits. Sometimes the result is somewhat bland, flavorless, and definitely doesn't qualify as a dessert. But sometimes the result is magical! This recipe definitely falls under the magical category and I urge you to try it out next time you're looking for a healthy(er) dessert recipe!
