Phew....I got this recipe up just in time for Memorial Day Weekend! Summer is officially here (well, kind of) and grilling season has begun. Even as a vegan, grilling can be lots of fun; grilled veggies, grilled corn on the cob, Field Roast sausages, and veggie burgers! If you're planning on going to a BBQ, a picnic, or just relaxing outside with family, give these delicious veggie burgers a try!
Homemade veggie burgers have always been hit or miss. I've made some that crumble apart as soon as I set them down, others have been too mushy, and some have been too hard and dry. I finally figured out that I needed a good base, combined with some sort of flour or grain to help hold them together. I chose lentils as the base because of their nutrient content, affordability, and ability to make a really great "dough" when mashed together. I use some almond meal and gluten free rolled oats to help assist in the dough process, along with spices, chopped veggies, and some ground flax seeds! The result is a crispy on the outside, soft yet firm on the inside burger that can be baked, grilled, fried on a griddle, and taste great when reheated (if there are even leftovers!) The flavor of the burger isn't too overpowering either, so you can really top them any way you like em!
