It's been a few days since my last recipe post...I've been busy exploring Oregon and haven't had much free time to experiment with new recipes! I have lived here for over two years now, and up until recently, I've only really explored the area within an hour or so of Portland. And while there is a ton to see within an hours drive, there is so much more once you go deep into some of our National Forests.
Most recently, some friends of ours invited us to Klamath Falls in Southern Oregon, so we jumped at the opportunity since we haven't been there before. Up until recently, my daughter would whine and complain if she was in the car for more than 10 minutes, so the thought of a 5 hour car ride sounded....terrible! But we figured out ways to break up the drive, with stops in new cities and parks along the way, so the trip actually wasn't too bad! We were able to briefly explore the Klamath Falls area and then head up to nearby Crater Lake which I have been dying to see since I moved here. I've seen some beautiful places in this world, but Crater Lake is without a doubt one of the most beautiful places I've ever been. I mean, seriously. Just look at that picture! And true to most pictures, it doesn't even compare to real life.
Normal caesar salads aren't very healthy. Even though romaine lettuce is good for you, it isn't so good when topped with cheese, mayonnaise based dressing, and oily croutons. And if you're going to eat a salad, it should be healthy, right?! I love a hearty, filling, good-for-you salad that hits on all the major nutrient groups (protein, vitamins, healthy fats, carbohydrates...), and this salad has 'em all. If this salad was getting a performance evaluation, it would get an "exceeds expectations" review, which is pretty much the best!
