Southwest Sausage Hash
Vegan and Gluten Free

2 small organic russet potatoes
1 organic red bell pepper
1 organic yellow or sweet onion
1 can organic black beans
2 vegan sausages, Tofurkey or Field Roast brand work best
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
3 tbsp olive oil
Optional toppings: avocado, cilantro, hot sauce
Begin by dicing all vegetables. The potatoes should be chopped into 1/2 inch size cubes to speed up cooking time. Slice the sausages into 1/2 inch slices as well.
Drain and rinse black beans. In a large frying pan, sauté potatoes, onion, and pepper over medium heat. Add spices and stir to combine. When potatoes are fork tender, stir in black beans and diced sausage. Continue to sauté over medium heat until the sausage has a chance to brown.
Serve warm. I recommend topping with avocado and cilantro. You may also top with an avocado cream sauce by blending a large avocado, a handful of cilantro, and juice from one lime.
