Tempeh Citrus Salad

Ingredients
Salad
8 cups of organic mixed greens
1 package of organic tempeh
1/2 cup pecans
1/2 cup cranberries
1 cup black beans
2 avocados
4 mandarin oranges or clementines

Honey-Less Mustard Dressing
1/2 cup dijon mustard
1/2 cup organic maple syrup
1/4 tsp salt

Instructions
Prepare salad dressing by whisking together all ingredients.  Set half aside, and pour the other half in a shallow dish to marinade the tempeh.  Cut tempeh into strips and place in the dish.  Cover with honey-less mustard dressing and place in the fridge.

Meanwhile, assemble the rest of the salad ingredients.  Divide lettuce into 4 bowls or plates and top with avocado, pecans, cranberries, mandarin orange slices, and black beans.  

Grill or saute tempeh over medium heat until it is crisp on both sides.  Place on top of salad and top with additional dressing.  Enjoy all the nutritional benefits that this salad offers!
