Three Cheese Bacon Mac Casserole

Vegan, Gluten Free (possible), Soy Free

  • 1 16-oz box of whole wheat elbow pasta (or gluten free noodles)
  • Vegan bacon-omit if you prefer soy free
    (I recommend Sweet Earth brand but Tofurkey tempeh bacon works too)
  • Whole wheat panko bread crumbs (optional)

Cheese 1-Sunflower Seed Cheese Sauce:
1 carrot, chopped
1/4 cup onion
1/4 cup water
1/2 cup sunflower seeds, soaked
1 small clove garlic
2 tsp olive oil
1/4 cup nutritional yeast
1/2 tsp vinegar
1/4 tsp salt
1/4 tsp chili powder
2/3 cup warm water

Cheese 2-Potato and Carrot Cheese Sauce:
1/2 large russet potato, peeled and chopped (about 1 cup)
1/2 onion, chopped
1 carrot, chopped
3/4 cup warm water
1/4 cup almond milk
1/2 cup nutritional yeast
1 tbsp vinegar
1 tsp salt
1/4 tsp garlic
pinch of cayenne pepper

Cheese 3-Cashew Parmesan:
1/2 cup cashews
1/4 cup nutritional yeast
1/2 tsp salt
1/4 tsp garlic powder


Begin by soaking your sunflower seeds.  

Prepare cheese sauce number 3 by placing all ingredients in a dry food processor or blender.  Blend on high until a fine texture is formed.  Set aside.

Prepare cheese sauce number 2 by boiling potato, carrot, and onion in a small pot over medium heat.  When potato is soft, use a slotted spoon to remove vegetables from the pot, reserving 3/4 cup of the warm water.  Add all vegetables and remaining ingredients to a blender and blend on high until a smooth sauce has formed.  Set aside.

Prepare cheese sauce number 1 by sautéing carrot and onion in 1/4 cup of water over medium heat.  When carrot is soft, add remaining ingredients to a blender and blend until smooth.  Set aside.

Preheat oven to 350F

Cook pasta according to package directions.  When pasta is tender, strain the water and place the noodles back in the pot.  Stir in all cheese sauces until all noodles have been coated.  Chop vegan bacon into 1/2 inch pieces and add to the noodles.  Stir to combine.

Pour the macaroni and cheese into an oven-safe casserole dish or individual oven-safe dishes.  Top with bread crumbs if desired.

Bake for 20 minutes and serve warm.
