Trail Mix Rice Krispie Bars

2.5 cups of rice cereal
¼ cup hemp seeds
¼ cup sunflower seeds
¼ cup flax seeds
¼ cup pepita seeds
½ cup pistachios, shelled and broken into small pieces
½ cup cashews, broken into small pieces
½ cup dried cranberries
½ cup dried blueberries (or any other dried fruit of your choice)
1 package of vegan marshmallows (Dandies minis is best)
2 tbsp earth balance butter
2 tbsp coconut oil, divided
1 cup chocolate chips
Prepare a 9x9 baking pan by covering with parchment or wax paper.
Add all fruit, nuts, seeds, and cereal (except chocolate chips) to a large bowl and stir to combine. Add earth balance butter and 1 tbsp coconut oil to a pot over low heat and melt. Once melted, add marshmallows to the pot and continue to heat, stirring frequently. When they start to look like fluffy pillows or clouds, they are done. Pour butter and marshmallow mixture over the fruit and seeds mixture and stir until combined. This takes a bit of elbow grease!
Once combined, pour into prepared pan and push down until firm. Let cool for an hour or two. Once cooled, pull the rice krispie square out of the pan using the edges of the parchment paper and cut into squares, however large you would like.
Heat 1 tbsp coconut oil over low heat until melted. Add chocolate chips and stir frequently until they are completely melted. Using a large spoon, drizzle chocolate over the rice krispie treats and let sit until chocolate has solidified.
