Vegan Sausage

Vegan, Gluten Free, Soy Free

1/4 cup diced onion
1 cup black eyed peas
½ cup whole wheat flour (or gluten free flour)
2 tbsp nutritional yeast
1 tbsp ground flax seeds
1 tsp garlic powder
¼ tsp black pepper
¼ tsp salt
dash or two of cayenne, optional
½ tsp liquid smoke
3 tbsp soy sauce (or gluten free tamari)
2 tsp maple syrup
1 tsp blackstrap molasses

In a frying pan, sauté onion in 1 tsp olive oil until translucent.  Meanwhile, add black eyed peas to a large bowl and mash.  Add remaining ingredients and stir to combine.  When onion is soft and slightly cooled, add it to the mixture and combine.  Divide the mixture into 4 parts and shape each into a log. Individually wrap each log in foil, leaving room at the end so you can twist the foil closed like a tootsie roll wrapper.

Heat a large pot of water on the stove and place a steamer on top.  I used a bamboo steamer but a metal one would work too.  Place the sausages in the steamer and steam for 20 minutes.  When done, place in the fridge and for a few hours.  When you’re ready to use them, unwrap from the foil and grill in a frying pan or on a BBQ.
