Winter Wheat Berry Salad
Vegan, Soy free
Serves: 6-large portions or 8-small portions
Prep time: 20 minutes
2 cups organic wheat berries
4 cups water
1 organic apple (any red variety)
½ cup chopped pecans or walnuts
½ cup dried cranberries
1 cup organic baby spinach, chopped
Juice from half a lemon or 1 tbsp vinegar
3 tbsp olive oil
3 tbsp maple syrup
salt and pepper
Bring water to a simmer over medium heat. Add wheat berries and cook until berries are soft. Let cool for 20-30 minutes or put in the fridge to expedite the cooling time.
Meanwhile, chop apple and spinach and combine all liquid ingredients (lemon juice, olive oil, and maple syrup).
Add fruit, veggies, nuts, and liquid ingredients to the wheat berries and stir to combine. Season with a little salt and pepper to taste.
Store in the refrigerator for up to one week. Can be served cold or at room temperature.
